Sotheby’s has sold a 49-year-old single malt whisky from The Dalmore housed in an 80kg glass sculpture designed by Zaha Hadid Architects for £93,750. Even though it did not break any records, it is a fine price for Dalmore.

On Friday, Sotheby’s held a sale of a 49-year-old Dalmore Luminary No.2 ‘The Rare’ single malt from The Dalmore Distillery. Proceeds from the sale were donated in their entirety to the V&A Dundee.

The Dalmore Luminary No.2 ‘The Rare’ is part of the Luminary Series, which was created in partnership with the V&A Dundee. It is one of three bottles made, and each contains a glass sculpture designed by Zaha Hadid Architects.

The sculpture’s creator, Fiaz Elson from The Glass Foundry, kiln-fired the glass in a handmade mold over 12 weeks. Later, he lowered the temperature one degree at a time. More than 500 hours were spent hand polishing the sculpture, which weighs 80 kilograms.

The Dalmore’s master whisky makers Gregg Glass and Richard Paterson OBE collaborated on ‘The Rare’ whisky.

In addition, the spirit was matured in American white oak ex-Bourbon barrels. Later, it was finished in an assemblage consisting of an exceptionally rare 30-year-old Apostoles Sherry Cask and Select Bourbon Barrels. The final step used an air-dried 1951/virgin oak hybrid cask.

There are only three bottles created, as well as two sculptures. One complete set will be archived at the distillery and one additional decanter will go into a final Luminary Series Compendium.

Jonny Fowle, global head of spirits at Sotheby’s, said: “This is a thoroughly deserved result for a true collector’s piece that combines to brilliant effect a highly aged liquid, a high concept design, and a worthy cause. The Dalmore is an icon of the whisky world and this second iteration in their Luminary series encapsulates all the key elements collectors are looking for in today’s premium whisky market.”

WORTH THE PRICE: It's pricey, but it is great! A worthy splurge.

OVERALL: Strap in, readers, 'cause this is gonna take some 'splainin.

This whiskey is composed of two Indiana ryes and three Kentucky bourbons. The two ryes were rested for 18 months in Amrut Indian Single Malt Barrels before being blended with the bourbons.

Now, go to a quiet room, add earplugs if necessary, and place a large napkin over your head to capture all the crazy aromas you'll get from this—things like over-baked chocolate brownies, figs, prunes, bonfire embers, ganache, chocolate cake, pastry cream and a deeply charred barrel. Heck, throw in cherry pipe tobacco and just a hint of peat smoke while at it. It's all there and more.

It's deep darkness on the palate. Espresso, figs and raisins lay the groundwork for a wave of baking spices, bitter chocolate and Black Forest cake. It takes a couple of sips to figure out that this is American whiskey in the glass. It's just so, well, transformed into something otherworldly. I believe this is the finest Collaboration Series whiskey made by Bardstown Bourbon Co. It's a spectacular example of what great finishing casks and blending can create.

Included in my press kit were the finished whiskey sample, a small bottle of Amrut Indian Single Malt, and a devilishly intriguing chocolate bar made with cardamom, cloves, ginger and mint. The Amrut Single Malt is fabulous all on its own, and tasting it helps the drinker understand its barrel's understated but genuine influence on the finished whiskey. Bites of the chocolate bar tasted with either whiskey were simply ethereal. I hope that both will come with any bottle of this Collaboration.

Japan has its own idiosyncratic varietals of oak used by their whisky industry. Mizunara has become familiar with erudite enthusiasts, as the wood’s characteristic sandalwood notes have found a fan following and it sees more use outside of Japan.

The odd thing is that even among those of us who study Japanese whisky (but don’t actually live in Japan), their use of cherrywood has gone largely unnoticed. I say that is odd because cherry trees have been identified with Japan much longer than anime, Toyota, sushi, katanas and Hello Kitty. The subject of Japanese woods does not come up often in conversation, even among my colleagues, but when it does come up I never hear what is to me an obvious question: why not cherrywood?

The answer is it is in use, and outside Japan to boot. Every Japanese distillery has a cherrywood finished whisky, most recently Suntory. Over in Ireland, both Teeling Whiskey Company and Irish Distillers with their experimental Method And Madness series have done whiskeys aged in cherrywood. Where fashioning casks from cherrywood is too expensive, smoking grain with the wood is an alternative.

Upton Tea Imports has done both. They ground some of those cherrywood whisky barrels into chips and used the chips to smoke Japanese black tea for six to eight hours.

The Tea
This isn’t a strong cup of morning brew, but more in the teatime, pick-me-up vein of afternoon teas. It mixes a mild tannic streak with a note akin to a berry-driven red wine and a current that is half-smoke, half-ash. This is quite distinct from the oak whisky barrel smoked tea I tried last month, and somewhat better in that it is more approachable for folks who aren’t absolute smokeheads. The smoky side here is strong, but moderate enough that folks who appreciate a current of smoke in their barbecue, chili or street corn, but are turned off by something like Islay single malts, will appreciate it.

The Contrasts range features whiskies designed as a twist on the delicately smoky profile of brand’s core range, with other releases including Contrasts Triple Distilled and Contrasts Double Matured Bordeaux Wine Cask. The unseasoned casks featured in this release were handmade by expert coopers in Speyside, then gently charred before being filled with Benromach’s signature subtly smoky spirit.

With an ABV strength of 46%, this whisky is currently available for purchase via independent whisky specialists at a recommended retail price of £60.
