One of the highlights of this week’s New Brunswick Spirits Festival was the food and whisky pairings created by The Spirited Chef, Taylore Darnell. She and the staff at the Delta Fredericton created spirited breakfasts, lunches, and dinners featuring unique combinations of food and whisky. We’ll talk with Chef Taylore about matching food to whisky and how our senses perceive those combinations on this week’s WhiskyCast In-Depth. In the news, there’s a new world record for the most expensive bottle of whisky ever sold at auction, and American single malt makers are still waiting for an official definition for their whiskies.

The Evan Williams Bourbon Experience (EWBE, est 2013) in downtown Louisville is celebrating it’s 10th Anniversary. It’s an important milestone and a substantial metric as they were truly the brand that kicked off the Bourbon experience boom in the Bourbon City.
Hard to imagine now, but prior to 2013, there was not one publicly opened Bourbon brand experience in Louisville. Heaven Hill had its behemoth Bernheim Distillery as did Brown-Forman its mass churning whiskey site, but both producers did not offer public tours at these large scale production locations. Along came the Evan Williams Bourbon Experience, christening the Bourbon tourism wave that has swept over the Derby City and is in full swing.
Now, there are at least 10 distillery and Bourbon experiential destinations in Louisville. Now, you can stay in Louisville and have days worth of amber entertainment and site seeing, all within a 10 minute drive radius. We’re not saying EWBE invented this concept, other brands had the wheels in motion. But it was the first tourism driven Bourbon concept and significant investment to open its doors going back a decade ago.
Evan Williams 10 year Single Barrel Bourbon: Commemorative Edition
Heaven Hill is offering a special 2013 10th Anniversary Evan Williams Vintage Single Barrel Barrel at 110 proof. This unique bottle is hand dipped in silver wax and features imagery of the Evan Williams Bourbon Experience on its specially designed label and tag. Each bottle of Evan Williams Single Barrel Vintage Bourbon includes handwritten label notes detailing the exact day it was put in an oak barrel to age, the barrel number, and the date it was bottled.
“We are proud to be one of the leaders in returning Whiskey Row to its original glory in the heart of downtown Louisville,” said Jodie Filiatreau, Artisanal Distiller at the Evan Williams Bourbon Experience. “This commemorative bottle of Evan Williams Single Barrel Vintage is a completely unique offering fitting of such a momentous occasion.”
This edition is comprised of 10-year-old Bourbon that was barreled in August, October, or December of 2013. The barrels were aged on the second floor of Rickhouse LL at the Schenley location. The mashbill for this edition is comprised of Heaven Hill Distillery’s traditional Bourbon Mashbill comprised of 78% corn, 12% malted barley and 10% rye.
Beginning Saturday, November 18, the limited-edition Bourbon will be available for purchase at the Evan Williams Bourbon Experience for $109.99 and at select area retailers while supplies last.
BLOCK PARTY CELEBRARTION: Saturday, Nov 18th, the public is also invited to celebrate the anniversary with an open house featuring tours and tastings at the Experience along with a block party held down the street at Repurposed on Main (615 W. Main St.) from 12:00-4:00PM.
The Bourbon is matured in Heaven Hill’s rickhouses under the careful supervision of Master Distiller Conor O’ Driscoll, who monitors the progress of each year’s vintage to ensure it maintains its intended flavor profile and superb quality. Evan Williams Single Barrel Vintage Bourbon has won five “Whiskey of the Year” awards and is one of the most critically acclaimed specialty Bourbons produced by Heaven Hill Distillery, the world’s second largest holder of aging Bourbon.

This week, Heaven Hill announced the launch of Square 6 Wheated Bourbon, the latest innovative product to come from the Evan Williams Bourbon Experience. This is the third Square 6 product produced exclusively at the artisanal distillery located at 528 W Main Street in Louisville, just steps from the site of Williams’ original distillery founded in 1783.
The Square 6 Wheated Bourbon is comprised of two distinct Wheated Bourbon mashbills which were carefully blended post-aging. The first mashbill consists of 74% Corn, 16% Wheat, and 10% Malted Barley, and the second mashbill consists of 68% Corn, 20% Wheat, and 12% Malted Barley. Unlike its predecessors in the Square 6 line which were bottled at 95 proof, the Square 6 Wheated Bourbon has been bottled at 105 proof, which further highlights the wheated taste profile.
With initial aromas of caramel, vanilla, figs, bing cherries and oak, the Square 6 Wheated Bourbon follows with tasting notes of sweet confectioners’ sugar and walnuts on the palate. The finish boasts of walnuts, oak tannins, baking spices cinnamon and cola. Artisanal Distiller Jodie Filiatreau and team distill one barrel of American Whiskey per day at the Evan Williams Bourbon Experience and is continually crafting innovative mashbills and tweaking the hand-crafted pot still process for each new recipe.
“Blending two Wheated Bourbon mashbills gives Square 6 Wheated Bourbon a completely unique taste which differentiates it from others in the market,” says Filiatreau. “We are excited for fans of the Square 6 line to try this latest release and we hope Wheated Bourbon lovers will want to add this to their collections as well.”
The initial release of the Square 6 series in May 2021 featured a new mashbill for Heaven Hill, a High Rye Bourbon consisting of 52% corn, 35% rye and 13% malted barley. In October of 2022, the Evan Williams Bourbon Experience released the Square 6 High-Rye Rye Whiskey featuring a mashbill consisting of 51% Rye, 35% Corn and 14% Malted Barley. The continuation of the Evan Williams Square 6 series distilled in the one barrel per day, hand crafted, copper pot still facility is a testament to Heaven Hill’s commitment to quality, craft, innovation, and tradition.
The limited release of Square 6 Wheated Bourbon will be available in small quantities as a unique offering at the Evan Williams Bourbon Experience and available at select Kentucky retailers for a suggested retail price of $89.99.

The Second Release from the Evan Williams Bourbon Experience
The Square 6 High-Rye Rye is the second release from the artisanal distillery at the Evan Williams Bourbon Experience. If you haven’t been to the Evan Williams Bourbon Experience in Louisville, it’s worth checking out. In fact you can read more about it and Artisanal Distiller Jodie Filiatreau in the Distillery Reviews section of BourbonObsessed.com!
But back to this rye! Why is it a “High-Rye” rye you may be wondering, since there are ryes out there, such as from a well known distillery in Lawrenceburg, IN, which have a much higher rye content than Square 6 High-Rye Rye. Well, it’s all relative. Heaven Hill’s regular rye mashbill is 51% rye, 37% corn and 12% malted barley. Whereas, the Square 6 High-Rye Rye mashbill is 63% Rye, 24% Corn, and 13% Malted Barley. So, with 63% rye, the Square 6 has a higher rye content. Voila! Hence the name!
Tasting Notes – Square 6 High-Rye Rye Whiskey
Let’s taste it:
Rested for 15 minutes in a Glencairn
Nose: Sweet, almost syrupy brown sugar and a bit of graininess; rye spices become noticeable after I acclimate to the initial flavors; hint of licorice and some unsweetened tea towards the back; deep sweet fruit like figs, slightly overripe pears and dried apricots; relatively mild alcohol Taste: Sweet initially; caramel and simple syrup sweetness; some rye spices, too; the tea, fruit and grain linger as well; however, there’s a surprising amount of black pepper spice which develops fairly rapidly Finish: Spiciness continues to grow. The initial black pepper is joined by a drier capsaicin like spice, along with some char and dry oak. However some of the sweeter flavors remain as well, and all linger for quite a long time.
Square 6 High-Rye Rye is Definitely A Pot Still Rye
There is no mistaking that this rye was distilled with a pot still. It has the distinctive flavors, characteristics and full body, that can generally only be found in a pot-distilled whiskey. However, the sweet almost syrupy beginning in no way portends what is to come. The amount of black pepper and capsaicin spice that develops fairly rapidly towards the end of the sip and into the finish, comes as a bit of a surprise. Although, perhaps it shouldn’t, as this is a High-Rye Rye!
Conclusion
I am a pot still whiskey, fan, and there really aren’t that many pot still distilled ryes out there. Neeley Family Distillery comes to mind, M.B. Roland, and perhaps the original batches of rye from Wilderness Trail Distillery. So it is very nice to see this Square 6 High-Rye Rye Whiskey join this small group. It’s quite a different flavor profile than the traditional Kentucky, Indiana or Pennsylvania rye, but one that I am finding quite enjoyable.
