Bardstown Bourbon Company, renowned for its innovative and transparent approach to whiskey making, will hand over the keys to the “House of Bardstown,” an immersive cocktail and culinary pop-up experience coming to select cities this spring

Each evening, a limited number of guests will receive transportation to an undisclosed address where, through the door, they’ll dance, dine and taste their way through a series of intricately crafted rooms and one-of-a-kind sensory experiences, each a chapter in the illustrious story of Bardstown’s collaboration and innovation. The limited-run activation will appear in Louisville later this month during Bourbon Classic Week on Thursday Feb 22nd and later in Nashville and Dallas in the spring. 

Throughout the evening, local culinary experts and bourbon connoisseurs will guide guests through a deliciously immersive journey of Bardstown’s innovative bourbon expressions, fostering a unique, lingering connection that transcends the glass. Guests will be invited to savor and celebrate the Bardstown story in a setting as refined, eclectic, and spellbinding as the spirits themselves.

The Experience

Attendees will begin their adventure in The Origin Room, a modern space that reframes traditional perceptions of bourbon with its clean and crisp aesthetic. From there, guests will delve into the Discovery Lab, immersing themselves in Bardstown’s exquisite blends with a one- -of-a kind tasting experience designed to elevate the sensory experience.

The journey continues at the Foursquare Bar, where the essence of Barbados meets the rich heritage of bourbon, creating a captivating dance of flavors and ambiance. Within the enigmatic Goose Island Lounge, a hidden gem reminiscent of a Chicago speakeasy, guests will find a secretive and captivating escape to the city.

“The House of Bardstown is not just an experience; it’s a journey into the soul of Bardstown Bourbon Company,” said Dan Callaway, VP of Product Development. “We’re excited to bring this immersive adventure to life, celebrating the legacy we’re crafting every day in a way that’s never been done before.”

The inaugural House of Bardstown will be held in Louisville this month, coinciding with the annual Bourbon Classic. Bardstown Bourbon Company announced today it will have two new releases hitting shelves October 6.

Discovery Series #11: First with Estate Distilled Bourbon

Bardstown Bourbon Co. Discovery #11 continues the award-winning series that showcases the innovative distiller’s practice of artfully blending rare and exemplary whiskies found around the world to push the envelope of flavor and style. Yet, in a first for the distillery, this edition of the Discovery Series includes a bourbon that was estate-distilled at Bardstown Bourbon Co.

“This is a special milestone in our Discovery Series, as our own estate-distilled whiskey has now matured, which gives us some exciting new blending opportunities,” said Dan Callaway, VP of Product Development for Bardstown Bourbon Co. “So, for Discovery #11, we decided to celebrate in a Kentucky kind of way and chose all Bluegrass-based bourbons to blend with what we estate-distilled.”

Over the years, the Discovery Series has combined whiskies from Kentucky, Tennessee, Indiana, Georgia, and even Ontario, Canada. Discovery #11 is the first time since Discovery #4 the series has featured all Kentucky bourbons.

“We used our bottled-in-bond recipe from the new Origin Series of our estate-distilled bourbon, however we wanted to explore a different take so the whiskey aged its entire life in French oak barrels as opposed to the traditional American oak,” Callaway added. “On their own, these stood as three tremendous bourbons, but some real magic occurred when they came together.”

Per the brand, Discovery #11 offers rainier cherry, butterscotch, brown sugar and roasted peanut on the nose, then a spirited palate of toffee and cinnamon spice, followed by a finish of ripe red fruit and oak. It is presented at 118.1 proof (59.05% ABV) and offered at an SRP of $139.99. Roughly 3,000 9L cases will be available through the Bardstown Bourbon Co. gift shop, at retailers in 24 states and online at Seelbachs.com.

Collaboration Series with World-Class Vintner Carter Cellars

Continuing its Collaborative Series that crosses spirits categories, Bardstown Bourbon Co.’s second new release is a collaboration with Mark and Sherri Carter, and the decorated Napa Valley winemaker Carter Cellars. That name may likely sound familiar, as Mark and Sherri Carter also have their own whiskey – Old Carter Whiskey.

For this release, a custom blend of mature bourbon and rye rested in ten Carter Cellars Napa Valley Cabernet barrels for an additional 14 months. The wine barrels were freshly emptied, to impart maximum flavor and they were separated and rotated throughout the rickhouse multiple times, yielding a beautiful balance of indulgent dark fruit and French oak spice.

“Carter Cellars has always shot for excellence in our award-winning wines, and we have a long history of producing 100-point wines. This has been a wonderful collaboration bringing together our teams who are all continuously on the pursuit of perfection,” said Mark Carter of Carter Cellars.

Per the brand, Bardstown Bourbon Co.’s Carter Cellars Collaborative Series offers a premium and complex aroma of cassis, violet, cinnamon and leather. On the palate it presents a rush of dark fruit, roasted pecan and vanilla cream that leads to a luscious lightly tannic finish.

It is presented at 108.3 proof (54.15% ABV) and offered at an SRP of $159.99. Roughly 225 9L cases will be available at the Bardstown Bourbon Co. gift shop and select Kentucky retailers.

This just sounds fascinatingly yummy!…Bardstown Bourbon Company announced today the newest upcoming release of their award winning and highly acclaimed COLLABORATIVE SERIES – Bardstown Bourbon Co. Goose Island Collaborative Series. The makeup – a Kentucky Straight Bourbon blend finished in Goose Island’s coveted Bourbon County Stout barrels.

This limited release features a bespoke blend of 6- and 7-year Kentucky bourbon aged an additional 12 months in freshly emptied Goose Island Bourbon County Brand Stout barrels. These barrels were not rinsed so the stout soaked staves could immediately mingle with the Kentucky bourbon once filled. The finished blend was then married with a beautiful 9-year Kentucky bourbon, creating an expression bursting with chocolate malt and dried cherry.

This will hit starting Sept 8th at the gift shop at BBCo with nationwide reach following in 24 states.

Per BBCo (Tasting Notes): Dark chocolate, honey, toasted almond and vanilla cream create an enveloping and decadent aroma. On the palate, roasted malt, cacao and allspice lead to a lasting balance of exquisite flavor.

Goose Island is known across bourbon and beer as the pioneer of barrel-aged stouts and have a history of collaboration with some of the most sought-after bourbon brands in the world. Since 2010, Goose Island has released Bourbon County Brand stout original and limited, variant releases each Black Friday. The Original Bourbon County Brand stout boasts deeply developed flavors of fudge, vanilla and caramelized sugar with a rich, decadent mouthfeel.

Unlike traditional barrel-finishing, the barrels were not rinsed after emptying the stout. Instead, Bardstown Bourbon left the residual liquid in the barrel. The stout barrels were emptied in Chicago in the morning and filled in Bardstown the same afternoon. The result is a spirit that bursts with authentic flavor that will delight both spirits and beer enthusiasts.

The Goose Island Collaborative Series release is presented at a cask strength of 100 proof (50% ABV) and offered at an SRP of $159.99. Roughly 3,500 9L cases of the finished bourbon will be available through the Bardstown Bourbon Co. gift shop, at retailers in 24 states and online at Seelbachs.com.

Two Exclusive Dinners: Chicago and Bardstown

In celebration of the collaboration, Bardstown Bourbon Co. and Goose Island will host two events celebrating the art of cask finishing. A paired dinner will take place on Thursday, Sept 21 from 6-9 p.m. in the Goose Island Barrel Warehouse in Chicago. The event will feature The 2020 Bourbon County Brand Stout, and explore unique offerings from Bardstown Bourbon Company. Tickets for the Chicago event are available for $150 per person.
