The Dalmore Highland Single Malt Scotch Whisky has unveiled two new Limited-Editions – The Dalmore Vintage 2005 and The Dalmore Vintage 2008 – which form the third release from the distiller’s prestigious Vintage Collection.

The Dalmore Vintage Collection, created by innovative Master Whisky Maker Gregg Glass and Master Distiller Richard Paterson OBE, offers exceptional whiskies of distinguished character.  The whiskies selected to form The Dalmore Vintage Collection are ultimately dictated by the casks themselves and the way they choose to shine during the annual cask inspection week, in a tradition which dates back over fifty years.

Each November, The Dalmore whisky makers spend countless hours in their historic warehouses on the banks of the Cromarty Firth, reacquainting themselves with their rare casks that have been quietly, patiently maturing. November is the optimum time for this process to take place, with the casks at rest in the cooler temperatures after the warm summer months, and their flavors alive and true.

Only the most exceptional casks, which display the finest qualities of The Dalmore and its signature style during this time, are hand-picked to become a ‘Vintage’. For the 2023 Vintage Collection, The Dalmore’s unmistakable chocolate and orange profile is showcased. The 15 Year Old, Vintage 2008 offers milk chocolate and mandarin, while the 18 Year Old, Vintage 2005 presents dark chocolate and Seville orange.

The Dalmore Vintage 2008 provides aromas of milk chocolate, caramel, mandarin, and cracked black pepper. To taste, manuka honey, sweet cacao, poached apples, and golden sultanas. To finish, expect to enjoy vanilla cream, chocolate brioche, Navelina orange, and a light cinnamon warmth. This expression has been matured in American white oak ex-Bourbon casks and enhanced by hand-selected Matusalem Sherry and Pedro Ximénez Sherry casks, with an ABV of 45.8%, natural color, and non-chill filtered.

The Dalmore Vintage 2005 offers aromas of dark chocolate, salted caramel, antique leather, and rich orange citrus. To taste, expect rich cacao, blood orange, dark fruits, marzipan, and moist ginger cake. To finish, Madagascan vanilla with Seville orange, a rich nuttiness and long, dry chocolate complexities. This expression has been matured in American white oak ex-Bourbon casks and enhanced by hand-selected Matusalem Sherry and Vintage 2005 Sherry casks, with an ABV of 49.3%, natural color, and non-chill filtered.

The GlenDronach Distillery has announced the annual release of The GlenDronach Grandeur Batch 12, one of the brand’s most luxurious expressions to date.

As a hallmark of the signature richly sherried style for which The GlenDronach is renowned, Grandeur Batch 12 is 29 years old and composed of a bespoke selection of rare sherry casks hand-selected by Master Blender Rachel Barrie.

“Every year since its inception in 2010, each limited edition batch of The GlenDronach Grandeur series has been highly anticipated and acclaimed, revered by connoisseurs and malt whisky aficionados for its character and full-bodied style and this is one of its most luxurious expressions to date,” said Barrie. “Grandeur Batch 12 is sure to be no exception, crafted from a bespoke selection of our oldest and most magnificent Oloroso sherry casks.”

Having matured slowly and deeply in Oloroso sherry casks for nearly three decades, this expression from one of the oldest licensed distilleries in Scotland epitomizes the richest rewards bestowed from the finest Spanish oak sherry casks. With a hue of dark mahogany, Grandeur Batch 12 features notes of sherry aromatics on the nose. The palate leads to flavors of raisin, cocoa, and espresso before a tobacco and sherry-soaked finish.

The GlenDronach’s commitment to creating Single Malts using time-honored methods passed down through the generations for almost two centuries, is encapsulated in this hand-crafted limited release, with each individual bottle sealed with wax and numbered by hand to reflect its rarity.

The GlenDronach Grandeur Batch 12 is bottled at 49.2% ABV, and as is the case for all expressions, develops its deep color naturally over time from the Spanish oak in which it rests. It is available in limited quantities in select markets for an SRP of $830.

Irish Distillers-owned Midleton Distillery has released Midleton Very Rare Forêt de Tronçais – Irish whiskey finished in rare French Tronçais oak casks originating from the French forest of the same name – as an addition to their Very Rare range of whiskies. The forest was established in the 1600s to sustainably supply oak for building ships.

Midleton Very Rare Forêt de Tronçais was matured in ex bourbon-holding American oak barrels, then finished for three years in the rare French Tronçais oak casks, bottled at 48% alcohol by volume and is said to offer notes of apple, caramel, honeycomb and pear.

Louisville, Ky.  Copper & Kings, Kentucky’s American Brandy distillery has recently released for the first time state-wide, something never-before-tasted from the brand: Bourbon. Debuting in October, Copper & Kings Bourbon is available at the Copper & Kings Distillery, as well as local retailers throughout the state of Kentucky.

Copper & Kings Kentucky Straight Bourbon Whiskey is made from a blend of 5-, 10- and 15 year bourbons. This is a flavor forward remix of the Kentucky tradition and is finished in American Apple Brandy barrels for 12 months

Per the brand, the resulting liquid is a unique opportunity to explore the way that classic bourbon notes mingle and develop with traditional brandy notes to create a wholly distinct taste experience. Closely monitored to the ideal flavor profile, the final blend, created by Head Distiller Brandon O’Daniel,  is presented at 111 proof (55.5 ABV) and offered for a suggested retail price of $65

“Our bourbon is another feather in the cap for Copper & Kings. We are born and raised in the bluegrass state and although we will always be a brandy distillery we are also extremely fascinated with what our barrels can do in regards to finishing spirits,” said O’Daniel. “Bourbon is the next logical step in exploring how the two distinctly American Spirits meld together. Our brandies are made with elements of the bourbon world and now we are excited to round out our portfolio with a delicious bourbon showcasing elements from our brandy world.”

The light amber bourbon leads with cracked pepper, cigar tobacco, fresh cut apple and dry soil on the nose, which leads to chocolate, cinnamon sticks, bubble gum, honeysuckle, orange zest and classic cherry and fig notes on the palate. The finish is long and dry with baked apples, earth, baking spices, apple butter and green tobacco. 

Visitors to Copper & Kings Distillery, at 1121 E. Washington Street in Louisville’s historic Butchertown neighborhood, will now find bourbon available in the gift shop and as a tasting feature on all tours.

J. Mattingly 1845 Distillery, created by Jeff Mattingly, a descendant of distilling pioneer John Graves Mattingly, opened its distillery today in Frankfort, Ky.  The new distillery features 23,000 square feet, which includes a gift shop, tasting bar, a small pot still, and a premier custom bourbon blending experience.  The distillery will offer tours, tastings and the custom bourbon blending experience every day but Sundays. 

Previously located in Georgetown, Ky., the new location at 20 Reilly Road in Frankfort, Ky. is part of a $6 million investment which will also add up to 50 new jobs.  That investment is projected to grow as the distillery starts distilling on site, and eventually adds a second column still and barrel warehouses on property purchased in Shelby County, Ky.  The addition of the column still carries on the 19th century Mattingly innovation of the coffee column still which greatly enhances continuous production of bourbon.

 A grand opening took place last week with Public Protection Cabinet Secretary Ray Perry speaking, joined by Frankfort Mayor Layne Wilkerson; President of J. Mattingly 1845 Harry Richart IV; and Cameron Mattingly, vice president of production.

 One could say Jeff Mattingly has bourbon in his blood.  His ancestor John Graves Mattingly started his first distillery in 1845.  Although the distillery was Registered Distillery #2, it is reported his distillery may have been the first registered distillery in Kentucky.  The Mattingly name is so ingrained with distilling there have been at least nine distilleries in Kentucky in which a Mattingly had a hand in developing.  The family also has connections to some of the most prolific bourbon barons in the industry, including George Garvin Brown of Brown Forman, the Willett family, and the Samuels family, with Margie Mattingly Samuels creating the iconic Maker’s Mark packaging, label, bottle shape and famous red wax. 

 Today, current owner Jeff Mattingly, alongside his son Cameron, carry on the Mattingly family mantle and continue to innovate, much like their ancestors did.  Each batch of their flagship J. Mattingly 1845 Bourbon is a custom, one-of-a-kind blend, using a proprietary double stave process to add texture, richness and depth before it is expertly blended by the J. Mattingly 1845 production team.   

Visitors to the new location in Frankfort will have the opportunity to participate in a state-of-the-art custom blending experience, which allows them to blend their own bottle from a combination of hand-selected barrels of Kentucky bourbon, wheated bourbon or rye whiskey, then choose their bottle, customize their label, and choose their wax color, offering a premiere hands-on experience not found at any other distillery.

“We’re excited to be in Frankfort and we appreciate the warm welcome we’ve received from the community,” said Jeff Mattingly, founder and owner of J. Mattingly 1845.  “Our slogan is ‘One Hell of a Pick,’ which came about when I was blending a batch with some bourbon experts from around the United States and it was so good we proclaimed it ‘One Hell of a Pick.’  That batch and that slogan will always have special meaning to me since it was one of the first bourbons sold and marketed in over 100 years under the Mattingly family name.  Now, we’re starting another new chapter with our move to Frankfort, and we look forward to helping our guests blend their own ‘One Hell of a Pick!’”

The J. Mattingly 1845 Distillery will be open for tours, tastings, and the J. Mattingly custom bourbon blending experience Monday-Friday from 8:30 a.m. to 5 p.m. and Saturday from 8:30 a.m. to 6 p.m.  Closed on Sundays.  Reservations are not required but are encouraged, especially for the custom blending experience.  Reservations can be made online at www.JMattingly1845.com.

GROUNDBREAKING in ever since of the term…Something very interesting is afoot “in them thar hills” of Eastern Kentucky’s Appalachian coal belt king region – Pike County. Something that until this moment has yet to be done in the long storied history of Bourbon.

The actual ground for this fascinatingly innovative concept however was broken well over a century ago. You see, along with Bourbon and horses, coal rounds out that sacred Kentucky cultural trifecta of identity and authenticity. Home grown Eastern Kentuckian brothers Kendall and Shannon Wright have embarked on a conquest to bring back life to the once thriving vast coal mine of Leckie Collieries Co. which had its heyday over a century ago in Pike County, 1913 – 1946.

“From 1913 to 1946, more than 23 million tons of coal were mined out of this property,” Kendall Wright stated. “Miners from all over the world traveled here to work, live and provide fuel to our nation during its greatest period of growth. We feel there is something special about honoring the work completed here over a century ago with a completely unique bourbon experience.”

The Wright Brothers are at this very moment aging Kentucky Bourbon in those very same underground mines, which in itself is visionary. But that’s just the tip of the iceberg for what they have in store.

In 2020, Kendall and Shannon bought a 1,200 acre property with plans for a corporate retreat. They soon discovered the land housed a former colossal coal mine, spanning well over 1,000 acres.

Per the Wright Brothers Distilling Co website, the idea was nurtured years prior with Bourbon legend Lincoln Henderson who co-founded Angel’s Envy and spent over 40 years with Brown-Forman. Kendall Wright and Lincoln formed a kinship hanging out during University of Kentucky Football tailgates when Lincoln was just starting Angel’s Envy. The Bourbon legend and Kendall would bond over Wright’s Eastern Kentucky moonshine.

Underground Aging: Will It Work?

Kentucky has seasons. It gets hot, cold, and everything in between. This is important as hotter weather increases liquid interaction within the barrel wood. Colder weather has the opposite effect in forcing liquid out of the wood.

How will a mine which maintains a steady temperature within the low 60’s F provide the necessary conditions to work the whiskey in and out of the barrel oak? ANSWER: Heat Cycling.

The company plans on implementing a heating system within the mine. This will give them complete control over how the liquid interacts with the wood per temperature and barometric pressure.

Heat cycling is rare but there are a few companies utilizing it. Woodford Reserve and Michter’s come to mind.

This is an ambitious endeavor. Here’s to the Brothers Wright having the right stuff and the proper grit to do something special.
