Tingling with spices like white pepper and coriander, it practically vibrates on the palate. Darkly toasted bread, French roast coffee, charred lemon, dried cherry, spearmint and some campfire mingle nicely alongside cocoa nibs. The finish is simple: long and warming.
Classic single malt notes of honey and dried raisin dominate the palate before warmed oatmeal and cream weave into the mix. Spice character is the only thing hinting at its respectable 114.8 proof, yet it’s so delicate at that proof–well below it, I’d swear, were this a blind tasting.
Upon arrival, the proofs of those 32 barrels were 125. Near that modest body of water and behind the rickhouse’s brick walls, they’ve steadily lost proof down to 108, which is pure magic in whiskey aging.
