Chattanooga Whiskey has announced the newest release in their award-winning Experimental Single Batch Series: Batch 037: Ancient Wheat.

Made from a blend of two whiskey styles, this three-barrel batch was crafted to highlight the flavor impact of a unique heirloom variety of wheat known as dinkel wheat. Also known to distillers as spelt or hulled wheat, this grain and its cultivation date back to the dawn of civilization, contributing a "nutty richness" to the whiskey.

"Every recipe we make has its own story, and every one of those recipes starts with a "first ingredient." For this experiment, our distillers focused on wheat - seeking to discover a "perfect" malted wheat varietal that could match the depth, flavor, and character of our Tennessee High Malt style. Surprisingly, this wheated whiskey's "first ingredient" happened to be one of the very first domesticated grains in human history!" - Grant McCracken, Chief Product Officer.

Each unique wheated whiskey recipe in the blend was comprised of the same three grain types - malted dinkel wheat, malted barley, and yellow corn. Together, this pot distilled blend of whiskeys contains an average of 51% malted dinkel wheat, which was toasted at low temperatures to preserve the character of the underlying grain. Aged for over four years in multiple types of toasted and charred oak barrels, each custom toast profile was meant to accentuate the nutty, toasty, and bakery-like character coming from the wheated mash bills.

“After the "first ingredient" is chosen, our distiller's job is to "listen to the whiskey" before making their next selection. In effect, every successive ingredient is chosen to complement and/or enhance the character of the one that came before it. So, although most of the flavor comes from the malted dinkel wheat, the multiple varieties of toasted barley malt, our Tennessee-grown yellow corn, and three types of toasted and charred casks, each build off of one another to form a wheated whiskey like no other, and uniquely Chattanooga Whiskey." - Grant McCracken, Chief Product Officer.

Bottled at 105 proof, expect notes of walnut raisin bread, dried apricot, brown sugar, nutmeg, molasses, and sweet tea.

Chattanooga Whiskey today announced the newest release in their award-winning Experimental Single Batch Series: Batch 036: Herbal Infused.

Inspired by the traditional kräuterlikörs of Germany, this experimental bourbon liqueur combines a German-malt-laden mashbill with an infusion of über-traditional botanicals, including star anise, ginseng, bilberry, and sarsaparilla.

“Since it began in 2017, our Experimental Series has been something of a playground for our distilling team – allowing them to explore traditional and lesser known spirit styles from around the world. Batch 036: Herbal Infused explores a very underappreciated German style of liqueur and reimagines it through our Tennessee High Malt lens. The result beautifully balances both tradition and experimentation, taking a world class style to another level.” - Grant McCracken, Chief Product Officer.

As with their previous liqueurs, Batch 036 was crafted from a base of the company’s trademarked Tennessee High Malt Whiskey – which in this case contained a variety of German specialty malts, including pale wheat malt and chocolate malt – infused with 100% real botanical ingredients. After aging in single use bourbon barrels for an entire year, dark candi syrup was blended into the spirit before being bottled in a green bottle, symbolic of the German herbal liqueur style.

“Every one of our liqueurs uses 100% real whiskey and real ingredients, but Herbal Infused takes this approach to another level – infusing 14 different botanicals in multiple "waves," each one for different periods of time. Chattanooga Whiskey today announced a new annual limited-edition release: The Vault Series. Selected once a year and bottled in 375ml bottles, the Vault Series features ultra-limited whiskeys that are one-of-a-kind artifacts from Chattanooga Whiskey's history.

Selected annually by their distilling team, this collection of offshoot experiments, alternate concepts, and rare single barrels is culled from their barrelhouse vault. These archived versions of bygone whiskeys are expressions of both nostalgia and discovery, each one offering a glimpse into the distilling team’s innovation and creative process. The series also gives fans a unique opportunity to rediscover favorite recipes and batches from year’s past.

Given its Thanksgiving week, seems like it would be a crime to not talk about an all natural pecan infused whiskey that is just hitting. Chattanooga Whiskey announced the newest release in their award-winning Experimental Single Batch Series: Batch 034: Pecan Infused.

Inspired by the flavors of Thanksgiving dessert, the all-natural bourbon liqueur was infused with a blend of vanilla beans, cacao nibs, coconut flakes, orange peel, and 100 pounds of roasted pecans, before a final addition of cane sugar and dark Belgian candi syrup. The result showcases flavors of turtle chocolate, toasted coconut, praline, and sweet potato pie.

As with their previous liqueurs, Batch 034 was crafted from a base of the company’s trademarked Tennessee High
Malt Whiskey, and in this case contained a complex variety of 10 unique pot distilled bourbon mash bills, ranging
between four and seven years old.

Batch 034 comes on the heels of a number of other highly anticipated Experimental releases, including Batch 033: Triple Peat, which was a Scotch-inspired blend of three peated whiskeys finished in three different Islay Scotch Casks; and Batch 032: Bourbon Barreled Limoncello, an Italian-inspired high malt liqueur made with over 100 pounds of fresh lemon peel.

“One of the greatest things about our infused liqueurs is their unmatched, full-flavored complexity,” said Founding Distiller and Chief Product Officer, Grant McCracken. “A big part of that complexity comes from our all-natural approach, which exclusively utilizes real ingredients, and puts them in direct contact with the whiskey over multiple days or weeks. And while the process is difficult, and takes much longer to execute, it’s absolutely worth the wait.”

Chattanooga Whiskey recently announced the release of their newest whiskey, Experimental Batch 031: Red, White & Blue Grist.

Made with a blend of stone-ground red, white and blue corn varieties, this commemorative batch celebrates the 10th anniversary of Tennessee’s “Whiskey Bill,” which, in May of 2013, legalized spirits production in Chattanooga, Tennessee, for the first time in over 100 years.

This (their 31st batch since 2017) is a high malt bourbon made with three stone-ground corn varieties from Riverview Farms Milling (Ranger, GA), along with more than 25% pale malted barley. Aged for over 4 years in charred & toasted barrels, the finished whiskey showcases the delicate flavor impact of each corn varietal; offering notes of dried fig, sweet corn cake, berries & cream, almond croissant per the brand.

“Every one of our Experimental Single Batches is meant to have its own personality and story, and Batch 031 is no different. Red, White & Blue Grist highlights the unique flavor contributions from less common, stone-milled corn varieties, while also telling the origin story of how Chattanooga Whiskey got started,” said Grant McCracken, Founding Distiller and CPO.

Over 11 years ago, Chattanooga Whiskey’s Vote Whiskey campaign galvanized the local Chattanooga community into action, leading to the drafting of the now famous “Whiskey Bill.” Since the bill was signed into law by Governor Bill Haslam on May 16th, 2013, dozens of distilleries have since opened across the state – creating renewed interest and growth from one of the world’s most storied whiskey making regions. In honor of the anniversary of the bill’s signing, each commemorative bottle is adorned with a sticker that was inspired by the seal found on House Bill 102 – a copy of which is on display at the company’s Experimental Distillery.

This highly anticipated release launched with a Founder’s Celebration Party on April 26th at the company’s Riverfront Distillery. Here attendees had the opportunity to be the first to taste the final product, along with individual whiskeys contained in the blend. Formulated yearly by Founder & CEO Tim Piersant, Founder’s Anniversary Blend commemorates the company's anniversary since releasing their first whiskey in April of 2012.

Following in the footsteps of last year's critically acclaimed 10th Anniversary Blend, the 11th Anniversary edition of Founder's revisits a familiar theme by blending three whiskeys that symbolize the company's past, present, and future. Similar to last year's vintage, this year's blend includes two repeat inclusions: the company’s original law-changing "1816" whiskey recipe (Lawrenceburg, IN), along with the company's now signature "Barrel 91" recipe (Chattanooga, TN). These two solera-finished whiskeys from the "past” and “present" join whiskey from a third "Infinity" solera, which contrastingly contains an evolving blend of straight whiskeys from both of Chattanooga Whiskey’s distilleries.

“Tasted on their own, the whiskey from each solera barrel is wildly different from the other,” said Grant McCracken, Founding Distiller and CPO, “From the traditional essence of ‘1816’, to the high-malt heritage of ‘91’, to the expressive and ever-changing ‘Infinity’, each barrel not only showcases the range of styles inherent to whiskey making, but also provides a range of options for blending."

The new 1,645 gallon "Infinity" solera presents the company’s third solera collaboration with Foeder Crafters of America (St. Louis, MO), who also crafted the company's "1816" and "91" barrels. Wrapped in lattice-styled stainless banding, the one-of-a-kind barrel reveals overlapping infinity, hourglass, and DNA helix symbols, collectively meant to symbolize the company's never-ending commitment to innovation.

A recurring release in the company’s range of core expressions, Founder’s Anniversary Blend will change from year-to-year and highlight each solera’s ever-evolving impact to the final blend. This year’s vintage is comprised of 25% “1816”, 50% “SB091”, and 25% “INFINITY”. Together, the blend of straight whiskeys offers notes of cream soda, chocolate chip cannoli, toasted oak, panna cotta, and candied walnut.
