What do you call a distillery with no brands of its own? A contract (or custom) distiller creates whiskies for its clients, and many of Kentucky’s largest distillers have often sold excess capacity by distilling for others. Bardstown Bourbon Company pioneered the current wave of contract distillers in Kentucky, and co-founder David Mandell is now one of the partners behind the new Whiskey House distillery. It will focus exclusively on custom distilling for its clients, and David Mandell will explain why on this week’s WhiskyCast In-Depth. In the news, Midleton Distillery’s brand-new visitors center is closed after this week’s flooding caused extensive damage, while time is running out to avoid a return to tariffs on exports of American whiskies to Europe.

Amber Beverage Plans New €35 Million Walsh Whiskey Distillery

Amber Beverage Group is expanding on its 2021 acquisition of Ireland’s Walsh Whiskey with plans for a new €35 million distillery in County Carlow along the River Barrow. Assuming the project receives planning approval, construction could begin next year on the project with the distillery slated to open in 2026.

“We need to lay down whiskey stocks for the next 10, 20 years and so on,” Walsh Whiskey founder Bernard Walsh told WhiskyCast in a telephone interview. “They (Amber Beverage) get whiskey. They understand that this is a long-term business, and they are taking that stance along with ourselves here at Walsh Whiskey,” he said.

Listen to our exclusive interview with Bernard Walsh:

Plans are to build the distillery at a historic maltings site in Dunleckney that Walsh called “one of the finest examples of industrial heritage in Ireland’s south-east region.” The riverside site was home to a corn mill in the 18th century and a water-powered brewery in the early 19th century before being converted to a maltings.

The distillery would be the second for Walsh Whiskey, which originally built a distillery at Royal Oak as part of a joint venture with Illva Saronno Holding of Italy. The partnership later fell apart, with Saronno holding on to the distillery and Walsh retaining the Writers’ Tears and The Irishman whiskey brands produced using sourced whiskey from Irish Distillers and other distillers around Ireland.

“This doesn’t take away from our long-term partnerships that we get already, and that will continue,” Walsh said. “For new expressions and all of the wonderful things that we want to do, we just need to have that independence.”

The Irishman Single Malt

Of similar quality to The Irishman The Harvest expression but quite a different character, lacking that Pot Still spice and also complexity from both malt and mixed cask maturation resulting in something very enjoyable. 84/100

Robust thanks to the Pot Still spices bestowed by green barley, vanilla from the Bourbon oak and biscuity malt notes also lead to an entertaining and complex dram for an entry-level price. 84/100

Writers Tears Seaweed IPA Cask

Another rather unique expression, definitely a cut above the standard Writers Tears expressions available. A touch overtly hoppy in places which I certainly enjoyed but really shines in the finish. 84/100

Not as favoured as the sweeter Icewine cask, this had a slighty more savoury and dare I say Umami feel about it following the Mizunara oak finish. More elegant in presentation and worthwhile spending longer with this one, this is a sip and savour dram,…

Not as favoured as the sweeter Icewine cask, this had a slighty more savoury and dare I say Umami feel about it following the Mizunara oak finish. More elegant in presentation and worthwhile spending longer with this one, this is a sip and savour dram, especially when you consider the unusual and rare nature of its construction. 84/100
