Just a short jaunt from San Francisco, Savage & Cooke Distillery has been patiently waiting for their whiskey to come of age. Three offerings are now available to consumers.
Remus Gatsby Reserve contains some of the 175-year-old Lawrenceburg, Indiana, distillery’s finest 15-year-old reserves of straight bourbon whiskey. This year, Remus Gatsby Reserve features two bourbon mash bills and is offered at cask strength.
Discovery #11 offers rainier cherry, butterscotch, brown sugar and roasted peanut on the nose, then a spirited palate of toffee and cinnamon spice, followed by a finish of ripe red fruit and oak. It is presented at 118.1 proof (59.05% ABV) and offered at an SRP of $139.99.
This new release is a blend of Woodford Reserve’s Bourbon, Rye, Wheat and Malt whiskeys. The whiskey was first aged in a standard new oak barrel, and was then finished in heavily toasted new oak barrels.
Bottled at 102.4 proof (51.2% ABV), the flavor-rich Petite Sirah wine barrels give Red Stave a balanced stone fruit taste profile and a beautiful red tint.
The entire collection is housed in a custom wooden display case, with each of the five 375ml bottles heavily-inspired by their Prohibition Era packaging and original bottle size: even the back cartons feature the cut-out for doctors to apply the prescription for medicinal whiskey.
For Reflection II, the dominate mash bill features less rye than the original, but the proof is increased from 95 to 100. Reflection II also features older whiskey stocks than its predecessor, with Gammon seeking out barrels that clearly exhibited elevated mid-note flavors…
Light amber in color, the 100% malted rye mash bill imparts a union of flavors. Malted Rye offers an elegant floral aroma, soft notes of vanilla & toasted rye on the palette, and a warm spice finish.
