Aberfeldy 21 Year Old Malbec Cask Finish was initially matured in a combination of sherry hogsheads and refill bourbon barrels before being finished for eight months in Finca Ambrosia Malbec casks, bottled at 46% alcohol by volume [92 proof] and is said to offer notes of blackcurrant, cinnamon, honey, rosemary, sage, strawberry and vanilla.

Aberfeldy 21 Year Old Malbec Cask Finish is being made available for $280 per bottle in Australia, Belgium, France, Germany, Luxembourg, Malaysia, the Netherlands, Singapore, Taiwan, the UK and​​ the USA.

Bushmills has released Bushmills 14 Year Old – a 14-year-old single malt Irish whiskey finished in Malaga wine casks.

Bushmills 14 Year Old was matured in both first and second-fill bourbon barrels for 14 years, finished for up to 12 months in Malaga casks, bottled at 40% alcohol by volume [80 proof] and is said to offer notes of cinnamon, honey and milk chocolate.

Tobermory has released a 26-year=old whisky finished in Oloroso sherry casks as part of their Hebridean Series – the whisky originates from a 2008 15-year-old release that was left in the same casks to mature for another 11 years.

Tobermory’s 26-year-old is said to contain notes of honey, toffee and walnuts.

Only 4,560 bottles are being made available for $470 per bottle via the distillery’s website.

Old school brand Chivas Regal has created a new blend – Chivas Regal 13 Irish Whiskey Cask – that includes some Irish whiskey in the mix.

Chivas Extra 13 Irish Whiskey Cask is a traditional Chivas Regal blend of Scotch whiskies but with the added twist of a portion of the blend being finished for an undisclosed amount of time in unnamed Irish whiskey casks

Chivas Extra 13 Irish Whiskey Cask was bottled at 40% alcohol by volume [80 proof] and is said to contain notes of honey, red apple and spice.

However, there is one caveat – Chivas Extra 13 Irish Whiskey Cask is only being made available in worldwide travel retail venues.

The limited edition Green Spot Quails’ Gate was initially matured in both American oak and ex-sherry casks before being finished for 16 months in Quails’ Gates’ pinot noir casks, bottled at 46% alcohol by volume [92 proof] and is said to offer notes of apple, cherry, cranberry, nutmeg, pear, raspberry and vanilla.

Heaven’s Door Spirits – co-founded by iconic American folk singer, Bob Dylan, in 2018 – has added to their Bootleg Series with the release of an 11-year-old wheated bourbon finished in Islay whisky casks.

Heaven’s Door Spirits Bootleg Series Vol IV is an 11-year-old wheated bourbon which spent nearly a year finishing in seasoned Scotch casks from Islay, was then bottled at 55.5% alcohol by volume [111 proof] and is said to offer notes of cedar, leather, peat, marzipan, sandalwood and sugar plums.

Heaven’s Door Spirits Bootleg Series Vol IV also features an oil painting by Dylan [titled “Lighthouse in Maine (2017)”] on the handmade ceramic bottle.

On a very technical level, the Redemption Cognac Cask Finished Bourbon is not a bourbon. I know, it doesn’t make sense when I say that right? But hang in for a second. The actual technical definition of bourbon does not allow for the use of used cooperage, to be a bourbon it can only ever employ new charred oak. A beautifully simple requirement that forces transparency.

Redemption Bourbon Finished In Cognac Casks Review

Because, technically, bourbon is no longer bourbon once it touches used cooperage, and is essentially just American whiskey, it has forced cask disclosure so the term Bourbon can still be used in branding and marketing. That’s why every bourbon, or rye, finished in a cask other than new charred oak calls it out in the name. It legally has to because it’s no longer a bourbon. It’s both technically, and legally, a “Bourbon Finished in XXX casks”.

Yes, the liquid itself, the bourbon, doesn’t magically turn into something else; the spirit itself does not change the second it touches used oak. It does change from the cask influence, but it still started out as a bourbon. So it’s logical to still call it bourbon, but it’s not accurate on a technical or legal level. It’s a fun one to think about eh’?

EYE
Pinkish amber

NOSE
Blackberry taffy, oak, copper, corn meal, baking spice, leather, and some anise.

Darkly sweet and slightly earthy, it’s a heavy aroma.

PALATE
Caramel corn, oak, blackberry taffy, copper, corn meal, baking spice, waxy vanilla and bits of leather.

Keeps pace with the aroma well and delivers a nice experience as it rolls through the senses.

FINISH
Med-long -> Oak, blackberry taffy, dried fruit and leather fade slowly.

BALANCE, BODY and FEEL
Well-balanced, medium-full body and a warm velvety feel.


Redemption Cognac Cask Finished Bourbon Review – Overall Thoughts and Score

Sometimes finishing works, sometimes it doesn’t; this is a case of does. The finishing delivers a complimentary set of aromas and flavors and they matched the casks to the whiskey well.

It seems, all too often, the cognac is hidden so deep in the background of finished whisky you wonder why they even did it. But here it’s front and center, but balanced and mixing well. I’m a fan of this Redemption Bourbon Finished In Cognac Casks.

SCORE: 4/5 (good, definitely recommend ~ B+ | 87-89)
