Company Distilling? What’s that?

Have you heard of Company Distilling? What about Jeff Arnett? You may remember him as Jack Daniel’s master distiller, and he now is assuming that role at Company Distilling. Their future plans include having two locations in Tennessee, a smaller one in Townsend and a larger one in Alcoa, which will be their main distillery. For now, Company Distilling’s home is Colombus, Ohio, according to the bottle. There is not a lot of information out there about this bourbon, other than it is a wheated bourbon that is both column and pot distilled. I read that it was sourced from distilleries in three different states, but I don’t know any specifics. At the time of this review, Company Distilling Bourbon is available only in Tennessee.

Tasting Notes

Let’s taste Company Distilling Bourbon:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Sweet cherry, apple & burnt caramel in the background; light cinnamon; light alcohol
👉🏻Taste: Light tea and caramel, light simple sugar sweetness; subtle char
👉🏻Finish: The flavors continue into the finish with a noticeable black pepper spiciness developing and then fading; moderate burn with flavors lingering

Summary

Company Distilling Bourbon is an interesting one. Initially the nose was dominated by fruit and sweetness, however the longer I sip on it, the more noticeable the burnt caramel becomes. Likewise, on my first sips, the flavors were relatively light but they became fuller the longer I sip, and a crème brûlée overtone develops. The black pepper in the finish was a bit unexpected, but enjoyable. Overall, this is a good bourbon for when I am in the mood for something that’s “easy drinking” but still has plenty of flavor.

What is wheat whiskey?

So what exactly is wheat whiskey? Wheat whiskey is similar to bourbon, except the dominant grain (at least 51%) is wheat, rather than corn. All the other rules apply, such as the requirement to be aged in a new charred oak container. Like bourbon, the remainder of the mash bill can be made up of any other grains, but corn and malted barley are usually used.

Bernheim – does that mean something?

Bernheim Original Wheat Whiskey is made by Heaven Hill Distillery and is named after the Bernheim Distillery in Louisville, Kentucky. Mash Bill

The Bernheim Original Wheat Whiskey mash bill utilizes just over 50% winter wheat, with the remainder comprised of corn and malted barley. Specifically, it is: 51% wheat, 37% corn, 12% malted barley. So it is like an inverted heavily wheated bourbon, with the corn and wheat swapped. So what does the high proportion of wheat do to the flavors?

Tasting Notes

Let’s Taste Bernheim Original Wheat Whiskey:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Apple, pear, light cherry, creme brûlée, toffee; oak, subtle leather; relatively light alcohol
👉🏻Taste: Crème brûlée, toffee, pear, light honey sweetness, with a little spice; relatively light body
👉🏻Finish: Honey sweetness, toffee and Crème brûlée continue; mild oak and char build with a bit of spice growing and lingering on. The fruit is still there, but more in the background now; medium finish with a mild burn

The perplexing flavors of wheat

Wheat perplexes me. The flavors it brings seem so variable. Sometimes there’s fruit; other times wintergreen or spearmint; perhaps butterscotch and crème brûlée; or maybe even a bit of spice. There at times seems to be some overlap with rye. I’ve heard people say that the difference between wheated bourbon and “rye” bourbon is like the differences between wheat and rye bread. I think that doesn’t do the grains justice, although it is making me hungry for a sandwich.🤷🏻‍♂️ Anyway, I feel I am getting a little off-topic, so, back to the Bernheim Original Wheat Whiskey review.

Summary

Bourbon drinkers may find Bernheim Original Wheat Whiskey a bit lacking in the body and “oomph” they are used to, but that should come as no surprise. Wheat definitely makes for a lighter bodied whiskey and this particular one is at a relatively low proof. However, it does have many enjoyable flavors. This is a nice whiskey for those starting out in whiskey or for those who enjoy something on the lighter and fruitier side. Perhaps it is one that unpeated scotch drinkers looking to try another style might also enjoy.

I know many of you are familiar with the Bottled in Bond Act of 1897. But what you might not be familiar with is that it doesn’t only apply to whiskey. It applies to any distilled spirit, including fruit brandy, which is specifically named in the original act. The Bottled in Bond Act of 1897 was essentially the first consumer protection act. It ensured the purity and identity of the spirit that was being purchased; something that was sorely needed at the time.

Bottled in Bond: It’s not just for whiskey

I know many of you are familiar with the Bottled in Bond Act of 1897. But what you might not be familiar with is that it doesn’t only apply to whiskey. In fact, the Bottled in Bond Act applies to any distilled spirit, including fruit brandy, which is specifically named in the original act. So, yes, the Bearing Rum from Marlin & Barrel Distillery pictured here can indeed be Bonded! How cool is that?!

Let’s review a little about the Bottled in Bond Act:

The Bottled in Bond Act of 1897 was essentially the first consumer protection act. It ensured the purity and identity of the spirit that was being purchased; something that was sorely needed at the time. In a nutshell, it states that distilled spirits must, in addition to any other style requirements, be:⁠

  1. Produced by 1 distiller at 1 distillery⁠ in 1 distilling season⁠
  2. Aged in wood (and in contact with the wood, except for vodka) for at least 4 years in a federally bonded warehouse⁠
  3. Bottled at 100 proof⁠
  4. Free of additives except water
Tax Stamp & Labelling

The Bottled in Bond regulations have changed a bit over the years. At one point the bottles labelled as Bottled in Bond or Bonded had to be sealed with a tax stamp and marked with the distilling season, bottling date and distillery or DSP. However, the tax stamp was eliminated as a requirement a while back. The Bottled in Bond Act still has labeling requirements which include the real name of the distillery where the spirit was produced, the DSP number and where the spirit was bottled, if different.

100 proof. Not always!

Oh, and here’s another Bottled in Bond Act tidbit for you; one that’s certain to win a few bets at parties (if you go to the kind of parties that I do, that is😊). Bottled in Bond spirits don’t have to be 100 proof; or at least they didn’t. “What???!” I can hear you saying; “This Ed guy should have called it a night long ago”. But I kid you not. For export purposes the proof just had to be above 80, although this provision seems to have been dropped from the current version of the regulations. How’s that for a tidbit!

Bottled in Bond….Vodka?

Another weird thing about the Bottled in Bond Act is that vodka can be Bonded, but the barrel it is aged in must be lined or coated with paraffin or other substance such that the vodka is not in contact with the wood. I am not sure of the point of aging vodka in a barrel and specifically not allowing contact with the wood, though…🤷🏻‍♂️ Bonded gin can be similarly aged without contacting the wood, or it can be exposed to the wood and become more traditionally barrel aged.

What we know

What we do know about Very Old Barton Bourbon 100 Proof is that at one time it had a 6 year age statement, and at one time it bore the bottled in bond designation. Those days are gone, though. We know this bourbon should still be at least 4 years old since it has to be if it has no age statement; that’s the law. And no one breaks the law.😀 Rumor has it that it is made up of bourbons 4-6 years old. Very Old Barton also comes in 80, 86 and 90 proof versions.

Tasting Notes

Let’s taste Very Old Barton Bourbon 100 Proof:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Cinnamon, apples, pears, baking spices, caramel, oak & leather; alcohol is noticeable.
👉🏻Taste: Caramel, char, oak, cinnamon & moderate simple syrup sweetness
👉🏻Finish: Juicy fruit gum appears early but gives way as cinnamon returns to dominance; a black pepper spiciness joins it; both linger. Moderately long finish with a mild burn

An enjoyable pour

Very Old Barton Bourbon 100 Proof is a very enjoyable pour. While the flavors are dominated by cinnamon, the cinnamon is relatively mild and works and plays well with others. The funny thing about this is that I have tasted this bourbon many time before and did not notice the dominant cinnamon until I was writing this review. So, to be sure, I asked my wife her opinion, and she concurred. So, unless someone snuck into our house under the cover of darkness, or the dog was up to some crazy antics, I’m going to have assume these cinnamon flavors are real.

A George Dickel – Leopold Bros Collaboration?

The George Dickel – Leopold Bros Collaboration Rye is an interesting new rye for quite a few reasons. I bet you’re wondering what those are? Well, I’ll tell you!

George Dickel Column Distilled Rye

I know you are thinking “George Dickel Rye – that’s been around for a while – what’s so special?”. While it is true that George Dickel Rye is not new, a rye actually distilled by Dickel is! You see, their George Dickel Rye that is sold in the bottle with the familiar green label is not distilled by George Dickel. It is “charcoal-mellowed” there, but is actually good old 95/5 rye from MGP in Indiana. They are completely transparent about this on their website. However, the rye in George Dickel – Leopold Bros Collaboration Rye was distilled at their own Cascade Hollow Distillery! As far as I know, a Dickel distilled rye has never been released before, although some Dickel aficionados might know otherwise?

Three Chambered Rye

What about the Leopold Bros Three Chamber Rye? Apparently, years ago, rye whiskey was commonly produced in a Three Chamber Still. There’s a video on the Leopold Bros website which explains the three chambered still in detail, but suffice it to say, it has 3 chambers and the end result is a heavy bodied flavorful rye. The Chamber Still, as it was called, extracts more of the oils from the rye, giving it extra flavor and body. This is helped along by Leopold Bros using the heritage grain, Abruzzi Rye, which has a lower starch percentage and hence more flavor producing components.

Alright, I think I’ve set the stage: this George Dickel – Leopold Bros Collaboration Rye is an exciting rye.

Tasting Notes

Let’s taste George Dickel – Leopold Bros Collaboration Rye:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Wintergreen; ample fruit such as apple, pear, dark cherry and a hint of orange; subtle baking spices, such as light allspice; maybe some cardamom. In the background is something dark and warming; maybe brown sugar? Mild alcohol

👉🏻Taste: Black tea, sugary sweetness, mild baking spices, light fruit

👉🏻Finish: Spiciness develops quickly, with black pepper and maybe some hotter red. Fruit also comes back early and lingers, with orange citrus rising to the forefront. The finish continues for a fairly long time. A bit of anise shows up late, and stays for a while. There’s some oak and char in the background as well and a relatively mild burn

Conclusion

There are a lot of flavors in this George Dickel – Leopold Bros Collaboration Rye, and most were not what I was expecting. The nose is very complex with more fruit than I expected. The taste is a short respite from the fruit, with some very pleasant full flavors. In the finish, the fruit returns and the more expected spiciness develops and carries through. This rye delivers different flavors than I anticipated, but it is a very enjoyable pour.

What make Old Grand-Dad 114 so special?

So, I always thought that the only difference between Old Grand-Dad 114 and the Bonded (100 proof) and 80 proof versions was just a step up in proof. Come on, I know you did, too.🙂 It turns out, though, that’s not quite the case. While all of the Old Grand-Dad bourbons (and Basil Hayden bourbons, for that matter) share the same mash bill, the similarities end there. I wouldn’t have believed this had I not read it on the Beam-Suntory website, but it turns out that OGD 114 is distilled to a lower proof than the others – 127. It is also bottled at barrel proof. Now we don’t know the barrel entry proof, but since most bourbons of this age go up in proof in Kentucky, we can assume that it is probably 110 or lower. So, all of these factors combine to give OGD 114 more flavor than its lower proof brothers.

Who is this Old Grand-Dad guy, anyway?

As a quick refresher – Old Grand Dad is Basil Hayden, Sr., and back in the day he was said to have made his bourbons with a higher rye content than was the norm. So that tradition continues today. Both the Old Grand-Dad and Basil Hayden lines share the same high rye mash bill. Most of the bourbons in these lines are non-age stated, other than the Basil Hayden 10 year.

Tasting Notes

Let’s taste Old Grand-Dad 114 Bourbon:

🛏 Rested 15 minutes in a Glencairn

👉🏻Nose: Vanilla, caramel, baking spices, cherry, light oak; moderate alcohol
👉🏻Taste: Caramel, vanilla, baking spices and simple syrup sweetness fairly quickly gives way to black pepper spice…
👉🏻Finish: …which builds into the finish picking up some oak and char as it lingers; moderate burn

In Conclusion

I have always thought this was a very solid bourbon and one that deserves a spot on everyone’s bar. Tasting it again today, I still feel that way. It has classic bourbon flavors, and lots of them. The rye spice is noticeable, particularly in the finish when it combines with the 114 proof. However, it is not overbearing. While the proof may make this a bit much for those starting out, this is definitely a bourbon perfect for those ready to make the leap into higher proof. Once they do, this will be a bourbon that they will likely keep coming back to.

Tell me more about Old Grand-Dad!

You may or may not know that Old Grand-Dad was Basil Hayden, Sr., and the whiskeys that carry his name and moniker are characteristically high rye bourbons. According to Basil Hayden’s website, Basil Hayden, Sr., who was a master distiller in Maryland, headed to Kentucky sometime in the late 18th century. He apparently began distilling bourbon with a high rye mashbill, a tradition which continues to this day. His grandson, Colonel R.B. Hayden, named Old Grand-Dad bourbon after him. Both brands are now owned by Beam Suntory, and coincidentally, the Jim Beam Clermont facility just happens to also be DSP KY-230.🤔

Mash bill

According to modernthirst.com, Old Grand-Dad Bonded Bourbon uses a mash bill of 63% corn, 27% rye and 10% malted barley. That mash bill is identical to Basil Hayden’s bourbon’s mash bill. 27% is a lot of rye! For a frame of reference, Jim Beam’s line of bourbons and their offspring (Knob Creek, Booker’s, Baker’s) use only 13% rye (and 75% corn, 12% malted barley, if you were wondering😊). Being a bottled-in-bond bourbon, Old Grand-Dad Bonded has to be at least 4 years old, and 100 proof. Other bourbons in the Old Grand-Dad line include 80 and 114 proof versions.

Tasting Notes

Let’s taste Old Grand-Dad Bonded Bourbon:

🛏 Rested for 20 minutes in a Glencairn

👉🏻Nose: Caramel, rye spices, pine, dried apricot, cherry, mild to moderate alcohol
👉🏻Taste: Caramel, light oak & honey; peanuts develop towards the finish
👉🏻Finish: Caramel, peanuts and light honey sweetness continue into the finish, which is fairly soft with just a mild burn. Some char and dryness develop, but they are fairly mild compared with some of the other value BiB’s.

Conclusion

Old Grand-Dad Bonded Bouron is an excellent bourbon at a reasonable price, and another great value BiB. For $20-22 a bottle, it’s always worth keeping around. Balcones Distilling is Born

In 2008, Balcones Distilling quietly sprang to life in the unassuming Texas town of Waco. The following year, this former welding shop turned homemade distillery began producing its own whiskies. By April 2010, it became clear that the tiny underpass (the building sets under the 17th St bridge) operation was something special. The reason being was that the distillery, not yet a year and a half old, walked away with a double gold medal in the corn whiskey category at the 2010 San Francisco International Spirits Competition. The Balcones Baby Blue Corn Whisky had wowed the judges.

Growth Happens

More recognition and awards continued to follow, and in no time Balcones Distilling had a demand that outweighed their supply. To solve this problem, the distillery desperately needed more space, not to mention larger pot stills. In 2011, the solution began to slowly materialize when the distillery purchased the historic Texas Fireproof Storage Company building located in downtown Waco. It was just a few blocks from Balcones’ original home. In 2015, after a few years of wrangling, Balcones began construction on its new facility. Retrofitting the 100 year old historic property was a Texas-sized undertaking. The result however was impressive. By February 2016, the distillery now had 4 stories and 65,000 square feet of space. Perhaps most importantly, they had new custom Scottish pot stills with which to continue to create their original brand of Texas whisky.

We spent an enjoyable few hours there, learning all about the distillery, tasting some great whisky and making some new friends. How many Kentucky Distilleries are there?

So just how many distilleries are in Kentucky? Well, we hear a lot of statistics, but in reality it’s actually not that easy to figure out. I made an interactive map and list of all licensed Kentucky distilleries a couple of years back. Keeping it updated has been, to say the least, challenging. I spent quite a bit of time working on it at the beginning of January 2022, and it actually takes quite a bit of detective work to sort things out.

You’d think it would be simple – just do a search for licenses. So that works well for many of them. But then there are others that have a license and an address, but nothing seems to exist there. Then there are ones that have a license one year, don’t have it the next, but then do again a year after that. New licensees appear, and then others just disappear.

600 Gallons per year law

Kentucky recently passed a law that requires all licensed distilleries to produce a minimum of 600 gallons of distilled spirits per year. So that doesn’t give much leeway to a distillery that is not yet producing, stopped producing, is under construction, or even just produces an occasional small amount for onsite use. So that may account for part of what I am seeing. I assume others have just planned to build a distillery and didn’t do it or didn’t complete it, and others just went out of business.

It’s interesting, too, because not all Kentucky distilleries are members of the Kentucky Distillers Association. Not all distilleries are on the Bourbon Trail or Craft Tour, either. So, there are plenty on the list of Kentucky Distilleries that you probably haven’t heard of. Also, if you check out the list, many are doing business under different names than you’re used to knowing them by.

A list of Kentucky distilleries is great, but sometimes a map is what you need. We have you covered, there, too. Check out our Interactive Map of all licensed Kentucky Distilleries! It is color coded so that you can tell at a glance what a distillery has to offer. For example, some licensed distilleries give tours whereas others might just have a visitor center and gift shop. Still others may just be corporate offices or production distilleries that aren’t open to the public. Others may produce spirts other than bourbon! (If you can believe that!!) Lastly, others may simple be closed or never even built.

Have you heard of OH Ingram River Aged whiskeys? I had posted about OH Ingram Rye, which was their second release, back in February 2021. Since then, I have enjoyed their whiskey on multiple occasions. So, when the newest addition to their line, this OH Ingram River Aged Straight Bourbon, showed up on my front porch (Thank you OH Ingram!!) I was eager to give it a try!

River Aging Makes O.H. Ingram Whiskeys Unique

The thing that makes OH Ingram unique is their river aging. No, the bourbon barrels don’t soak in the river. (although that could be interesting 🤔) Hank Ingram has the river in his blood, so to speak. His great-grandfather founded the Ingram Barge Company way back in 1946, and now, 75 or so years later, Hank is aging bourbon in his own floating rickhouse, which, you guessed it, was built on a barge. It’s an interesting concept – the motion of the river, temperature shifts and humidity all have an effect on the aging whiskey. There was one little hurdle to overcome before he got started, though: aging whiskey on the river was not legal.

Fortunately, that “small” legal obstacle, and many others were surmounted, and river aging was able to commence. Whiskeys were sourced from Indiana, and the rest is history. This bourbon is OH Ingram’s 4th release, the others being the OH Ingram Straight Whiskey, Straight Rye and the Flagship Straight Bourbon Whiskey, which I really enjoyed. So what’s the new 105 proof bourbon like?

Tasting Notes

Let’s taste OH Ingram River Aged Bourbon:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Caramel, crème brûlée, dark stone fruits like black cherry and plum, light cedar and pine; moderate alcohol
👉🏻Taste: Crème brûlée, honey, oak and light char
👉🏻Finish: The creme brûlée & honey linger; char and oak build; moderately long finish; moderate burn

Summary

Well, river aging does it again! I’m sure there were great flavors in what I presume was an MGP bourbon to begin with. However, the flavors seem more mature and rich than I would expect from what I assume is a relatively young bourbon.
