Last Friday, we kicked off the fall WhiskyFest season with WhiskyFest San Francisco, where throngs of whisky lovers came together to enjoy over 400 different whiskies. And last night, the fun continued with WhiskyFest New York, an event that drew even more fans and had plenty of top-tier whisky names in attendance. If you’ve missed out on these events, or want to get in on some superb sipping once more, WhiskyFest Las Vegas is on December 2nd at Resorts World Las Vegas; for now, tickets are still available.

In new whisky this week, there are plenty of limited releases coming out ahead of the holiday season. Angel’s Envy returns with the 11th edition of its cask strength port wine barrel-finished straight bourbon, Booker’s has released its third whiskey of 2022, and Balvenie adds three new rarefied single malts to its Stories lineup. Halloween is on Monday, which means it’s time to unwrap some candy, open up some whisky, and find your favorite pairing. We put together this list of whiskies that showcase popular candy notes, though we also have a guide to pairing a variety of candy types with a wide range of whisky. Start by matching flavors, searching for whiskies that have notes of chocolate, nuts, cookies, and caramel, and grabbing a Snickers, Twix, or other candy to go with it.

As for new whiskies this week, there are plenty of treats to choose from. Buffalo Trace has unveiled this year’s Antique Collection, which includes the return of George T. Stagg. Glenmorangie adds to its Tale series with a woodland-inspired single malt, while The Macallan adds to the Harmony Collection with a pair of whiskies inspired by coffee. Fall is in full swing, and so are new whisky launches. In a burst of good news for Pappy fans, the 2022 Van Winkle lineup has been announced, and with it the word that more bottles than usual are available this year. Does that mean it’ll be easier to get your hands on one ahead of the holiday season? Not necessarily, but here’s to staying optimistic.

The Van Winkle whiskeys aren’t the only specialty releases making their debut this week. There are two new whiskies from Hibiki—a cherrywood-finished blend and a 30 year old whisky—both of which are highly limited. Knob Creek, meanwhile, has introduced a rarity of its own, an 18 year old bourbon that marks its oldest release to date, and High West has unveiled the 10th edition of A Midwinter Night’s Dram, along with a distillery-exclusive special to commemorate the 10th anniversary. From Scotland, Glendronach has debuted Grandeur Batch 11—aged for 28 years—while Gordon & Macphail is offering three new ultra-limited, ultra-aged bottlings. Read on for full details.

A New Distillery Is a Homecoming for Heaven Hill in Bardstown

Old Heaven Hill Springs Distillery was nestled at the base of a hill that slopes down to peaceful Gilkey Run Road in Bardstown, Kentucky, not far from owner Heaven Hill’s main offices. The distillery was built in 1935, the year of the company’s founding. The old warhorse was the nerve center of the operation—until the afternoon of November 7, 1996, when disaster struck.

A fire broke out in a rackhouse at the top of the hill, and within minutes it was burning to the ground. Its flaming bourbon barrels were turned into rivers of fire, flowing forth to ignite six more warehouses. Fueled by stormy weather and high winds, the fires raged throughout the night. Witnesses saw barrels explode into the night sky, and the flames reached hundreds of feet into the air. The streams of flaming bourbon eventually made their way down the hill to the distillery, which was also consumed by the flames. Miraculously, no one was killed or seriously injured, and 37 warehouses managed to survive. But the fire destroyed some 90,000 barrels, equal to 2% of the world’s bourbon supply at the time.

The distillery was never rebuilt. Instead, Heaven Hill entered into talks with United Distillers (UD), a Diageo predecessor company, which was looking to exit the bourbon business at the time. In 1999 an agreement was struck for Heaven Hill to acquire UD’s giant Bernheim Distillery in Louisville, in what proved to be one of the great bourbon deals of all time. Bernheim has been Heaven Hill’s distilling home ever since, though the warehouses and bottling operations remain in Bardstown. The footprint of the Old Heaven Hill Springs Distillery became a grain-receiving and storage area and is still used for that purpose today—meaning that at least part of the production process remains at that site after all these years.

In a symbolic closing of the circle, this week Heaven Hill broke ground on a new $135-million distillery in Bardstown, to be named Heaven Hill Springs Distillery in honor of the original place. Of perhaps even greater symbolism, the project will mark Heaven Hill’s return to distilling in Bardstown after a gap of nearly 30 years.

The new distillery’s location will be at 1015 Old Bloomfield Pike, a couple of miles away from the old facility, and is slated to become operational by 2024. The initial annual production capacity will be 150,000 barrels, but over time will expand to 450,000 barrels, the same size as Bernheim.

Kentucky Governor Andy Beshear, Heaven Hill president Max Shapira, and master distiller Conor O’Dricoll break ground on the new Heaven Hill Springs Distillery.

Heaven Hill Springs Distillery will be used to augment the company’s American whiskey production. It will also house some innovation projects, though no one is yet sure what form those will take. Some parts of the new facility might be opened to the public in the future, but the tourism component will be minimal. The focus will be working with the six traditional Heaven Hill mashbills—for bourbon (78% corn, 10% rye, 12% malted barley), wheated bourbon (68% corn, 20% wheat, 12% malted barley), rye (51% rye, 35% corn, 14% malted barley), corn whiskey (80% corn, 8% rye, 12% malted barley), wheat (51% wheat, 37% corn, 12% malted barley), and malt whiskey (65% malted barley, 35% corn).

With Bernheim expanded to the full limits of its Louisville footprint and bourbon sales booming, it was only a matter of time before Heaven Hill got to work on building another distillery. The only question was where it would be. In the end, Bardstown was the logical—and sentimental—choice.

“We’re honored to celebrate this homecoming,” said Heaven Hill president Max Shapira in his remarks at the groundbreaking ceremony. “I’m proud to salute our history, and the many Bardstown men and women who helped build our brands over the years, by naming our new facility in honor of the original Old Heaven Hill Springs Distillery that my father and uncles founded in this community nine decades ago.”

St. Patrick’s Day is rapidly approaching, which means we’re getting new Irish whiskey releases. Leading this week is the 2022 edition of Midleton Very Rare, the ultra-aged annual release crafted by Midleton master distiller Kevin O’Gorman, who took on that role from Brian Nation in 2021. Other Irish releases this week include a commemorative bottling of The Sexton to honor the final season of “The Walking Dead,” and a Glendalough single malt finished in mizunara barrels.
