Dropping the spirits from your Friday night cocktail, doesn’t have to mean compromising on flavour. Fortified wines deliver complexity in the same way spirits do without the alcoholic heft. Sherry in particular, with its flavour enhancing powers of umami, makes a great stand-in for gin or whisky. Try subbing 50ml of dry manzanilla for the London dry in your Negroni and you’ll have a great aperitif that’s easier on your head than the original. The recipes below show how you can use sherry to effectively cut a few units out of cocktail hour.

Rebujito

A popular way to beat the heat in southern Spain, the classic Rebujito is a simple highball of dry sherry and Sprite or 7up. It’s a fine drink as-is, but if you take the time to juice some fresh citrus – effectively making it like a Tom Collins – then the Rebujito really comes into its own.

Brandy Smash

Ingredients

50ml Valdespino Fino Inocente 
10ml Lemon juice
10ml Lime Juice
20ml 1:1 simple syrup
Soda Water
6 Mint leaves

Method

Pour the sherry, citrus juice, sugar and mint leaves into a highball glass. Lightly muddle the mint leaves to wake them up a bit and then fill the glass to the brim with ice cubes. Top with soda water and enjoy. You can easily scale this recipe up and serve it by the pitcher. It makes a nice little appetite-lifter to serve pre-dinner, particularly when the weather starts to warm up.

Valdespino is a little fuller than your average Fino, with a palate of toasted almonds and salted caramel that stands up nicely to the citrus and mint. A bottle will keep for about two weeks in the fridge after opening so you don’t have to finish it all in one night.

Bamboo

Fills a Martini-shaped hole without the large helping of gin. The Bamboo found its way into the cocktail canon in the late 19th century, when it began gracing the bar at the Yokohama Grand Hotel.

Ingredients

50ml La Gitana En Rama Manzanilla
50ml Carpano Bianco Vermouth
2 Dashes Regans’ Orange Bitters

Method

Put a cocktail glass into the freezer ahead of time, you’ll appreciate the extra few degrees you shave off when it comes time to drink. Stir all ingredients with ice until nicely chilled. Strain into your frozen cocktail glass and garnish with a lemon twist.

Any dry sherry will do the job here, but the fresh saltiness of Manzanilla lifts the botanicals in the vermouth nicely. La Gitana En Rama is unfiltered, showing lots of body and character, even when stirred down over ice. You could also use a dry, nutty Oloroso and a sweet red vermouth – but you’ll wind up with more of a digestif than an aperitif.

Sherry Cobbler

The Cobbler Is one of the earliest cocktails, arriving in American barrooms with its cousin the julep in the 1820s-or-so, around the time that block ice became commercially available. Drinks historian David Wondrich suggests that the relatively low-octane Sherry Cobbler occupied a similar role to modern soft drinks and helped to popularise both ice and the drinking straw.

Ingredients

75ml Gonzalez Byass Leonor Palo Cortado
2 Orange slices
1 Lemon Slice
20ml 1:1 simple syrup

Method

Muddle your sliced citrus fruit with the sherry and simple syrup in the bottom of a shaker. Add ice cubes and shake hard. Strain into a highball glass filled with crushed ice and top with a fresh orange slice. Cobblers are supposed to be pretty, so a sprig of mint, or some more fresh fruit for garnish makes a great addition – just use whatever you have to hand.

The Gonzales Byass Palo Cortado is dry and nutty, but also has a fruity, citrusy side that shows really nicely in a cobbler. A dash of orange liqueur or Maraschino will add an extra dimension, as will a few berries or some diced pineapple in the shaker. Like many classic cocktails, the format affords plenty of room to riff and remix.

PX Flip

A serious desert cocktail, the flip takes a little booze and a whole egg and gives you a glass of silky, creamy goodness. Lighter than the lactose-laden likes of a Brandy Alexander, the PX flip satisfies in a similar way as a cream liqueur but fresher and less cloying.

Ingredients

60ml Triana Pedro Ximenez
1 Whole egg
2 dashes Angostura bitters
Nutmeg

Method

Chill down a large cocktail glass in the freezer. Shake all ingredients as hard as you can with ice. When you’re trying to whip up a whole egg you need to make sure you’re shaking for at least 60 seconds. Fine strain into the chilled cocktail glass and you’ll be rewarded with a light but creamy cocktail that tastes of raisins, toasted nuts and baking spices. Garnish with a little grating of nutmeg and serve.

A little slug of good dark rum will add some extra backbone if the situation demands it, as would a little Anejo Tequila if you’re feeling adventurous. Such additions will start to raise the ABV, of course, but even 15ml-or-so will make a difference to the flavour.

Even though Nelson’s Greenbrier Distillery of Nashville has released it’s own fully developed, flagship in-house whiskey, that doesn’t mean they have abandoned the idea of sourced whiskey. Far from it. Not only does their starting, sourced brand of Belle Meade endure, the company added a new sourced brand to the mix, Nelson’s Brothers Bourbon.

The new brand currently has two expressions. Both are blends of sourced bourbon, and the main distinction is proof. The “Classic Blend of Straight Bourbons” is bottled at 93.3 proof, while the Reserve Bourbon is bottled at cask strength. The sourcing is from Kentucky, Tennessee and Indiana (a cluster familiar to fans of Barrell Bourbon for years now), and the press material from Nelson describes the Classic Blend as being based on high-rye bourbon, while the Reserve is drawn from especially aged barrels in the company inventory.

So, when I referred to the “main distinction,” I did not mean these two products are merely the standard and cask strength version of the same recipe. However, without more information about the sourcing and maturation, we can’t really know just how far apart they are.

I received samples of both, and started by snagging one without looking at which I had. Thus, we’re starting with Nelson Bros. Reserve, bottled at 107.8 proof.

The Bourbon
The scent that rose from my Glencairn was sitting very much in the candied bourbon zone, with notes of vanilla, marshmallow and butterscotch, only thickly so from the relatively high proof. The palate comes across as a crust of cinnamon toast, so think butter, brown sugar, cinnamon and nutmeg all melted together, but without the bread. Instead, add some vanilla and ginger. The finish rolls off that before turning a little nutty and a little woody.

Overally, I thought Nelson Bros. Reserve was a pleasant enough sipper, sitting very much in this place where it packs some heft without being a ball breaker. That makes it a natural bottle for folks who like their whiskey stronger, but are honest enough with themselves to admit that 120+ proof whiskey often requires some dialing down with water. It’s just strong enough, stopping short of always smacking you. That said, what I discovered was that it really shines as a base for bourbon cocktails, especially if you want to take your home cocktail game up a notch.

How Drinks International (DI) Gets to Their Ranking

Each year, DI releases an annual report on the best selling spirits per category, according to data from bar owners and managers across the globe. Per DI, that number is 100+ bars in total. While that doesn’t jump out as a large quantity of date, they rely more on the quality of each data source as the bars are noted as being some of the best and most recognized in their respective countries, 33 countries in total are represented per DI.

Directly from DI: The Annual Brands Report results are the culmination of a survey of 100 bars from 33 countries around the world which have been nominated or won international awards. The report offers a picture of the buying habits of the world’s best bars – not only which brands sell best, but also what’s trending to indicate the brands that are hot right now.

  3. Buffalo Trace

DI had the following to say regarding this TOP 10 list:

The results on the bestselling list haven’t been as dramatic as you might expect – nine of the 10 brands appeared on the list last year – but every bar that was polled did stock at least two brands from the category.

Maker’s Mark returns to the number one spot for the first time since 2019, beating Bulleit by the narrowest of margins. Both were house pour in 18% of the bars and second choice in around 11%. It was only as a third-choice selection that the Beam Suntory Kentucky straight bourbon edged out Diageo’s number one brand from last year.

Buffalo Trace falls a single position to third, a house pour in 15%. In 2018, the brand’s parent-company, Sazerac, pledged $1.2bn to boost the brand’s production over a 10-year period which, to date, has led to a 50% increase in whiskey production. Time will tell if this growth impacts the brand’s popularity in our polled bars.

DI also releases a “TOP 10 TRENDING” report annually. This is more subjective to what each bar notes as being “on the rise” if you will. Hot. The up and up. Taking #1 for AW on this list is Louisville based Michter’s.

Wilderness Trail Distillery (Danville, KY) closed out 2022 grabbing major headlines as it was bought for $420M ($600M overall evaluation) by spirits giant Campari. Picking up where they left off, they are starting 2023 with a bang as they announced this week their bottling line is set to nearly DOUBLE its capacity.

The brand shared the following passage this week:

The machinery is needed to enhance production because the barrel inventory of aged, ready-to-bottle Bourbon and Rye Whiskey is doubling from 2022 to 2023. Inventory is expected to double again in 2024.
 
The current bottling line, with an inline filler, a corker, and an inline labeler, is capable of processing 3,100 barrels per year on one shift (3,000 bottles per day). In 2023, WTD needs to process 5,000 barrels in bottling (6,400 bottles per day)
 
Presently, the limiting factor on the line is the inline label machine. It restricts the line to 18 bottles per minute. In mid-January, WTD is upgrading to a rotary label machine made by PE Labelers. This machine will allow the bottling line to run 28-30 bottles per minute.
 
New case conveyors also will be installed to enhance productivity. The new machinery will allow WTD to meet bottling needs through 2025 running across one and two shifts.
 
In 2026, WTD is planning on installing a new bottling line, and the label machine will be redeployed to that new line where it will be capable of running up to 90 bottles per minute.

INGREDIENTS

4oz dark chocolate

2 egg yolks

1/4C coconut sugar

1/8 teaspoon Salt

1 teaspoon Vanilla

1C heavy cream

1 Tbsp Bourbon

1 TBSP Woodford Reserve Bourbon

INSTRUCTIONS

  1. Whisk the heavy cream, egg yolks, sugar and salt in a saucepan over medium heat. Stir consistently until the mixture is thick enough to coat the back of a spatula. Less than 10 minutes.
  2. Pour the mixture over your chocolate in a heat proof bowl and let sit for 2 minutes.
  3. Add the bourbon and vanilla and whisk until smooth.
  4. Divide the mixture among 2-3 ramekins and refrigerate until set, about 2 hours or overnight if you’d like them extra thick.
  5. Top with whipped cream and chocolate shavings if you’re feeling fancy, and enjoy!

Bourbon lovers everywhere rejoice! Here are 10 (alleged) benefits of how bourbon can actually be good for your health. Please remember, the best results are for those that drink in moderation. Be sure to always drink responsibly, and never when behind the wheel.

1. Reduces Stress Levels

Stress has become such a big part of everyday life, especially over the last 3 years. In fact, it is the leading cause of premature death. The good news is that a drink of bourbon has been shown to calm nerves and reduce stress.

2. Improves Your Immune System

Bourbon is full of antioxidants, which eliminate free radicals and keep your immune system healthy. These antioxidants come from the ellagic acid in bourbon, which helps protect you from contracting illnesses from viruses or bacteria.

3. Prevents Blood Clots

Blood clots can be very dangerous, leading to heart attacks, strokes, or other serious health conditions. However, bourbon is good for your heart and helps you maintain a healthy circulatory system.

4. Reduces Your Risk of Cancer

The National Institute of Health found that bourbon actually reduced the risk of developing dementia in adults that consumed one to six drinks per week as opposed to non-drinkers and heavy drinkers. This was attributed once again to the antioxidants found in bourbon.

7. Increases the Amount of Good Cholesterol

Cholesterol is an important component of health that needs to be monitored closely. Consuming bourbon was shown to not only increase the amount of good cholesterol in your bloodstream but it was found to reduce the amount of bad cholesterol as well.

8. Relieves Cold Symptoms

Drinking bourbon can widen your blood vessels and help you clear mucus out of your nose and chest. This is one of the reasons why a Hot Toddy is such a popular drink during winter when people typically suffer from the worst of cold symptoms.

9. Reduces the Risk of Obesity

Bourbon is a lower calorie drink when compared to other alcohol. It also has been shown to curb appetite and aid in digestion after meals, lowering the risk of obesity. These benefits are once again attributed to the ellagic acid found in bourbon.

10. Prolongs Your Life

The Research Society on Alcoholism released a study that found those who drank a moderate amount of bourbon had a lower mortality rate than those who abstained from alcohol and those that were considered heavy drinkers.

Wyoming Whiskey Ten Year Anniversary Edition

Ok, so on Tuesday, I was whining about the quantity of snow that we’d received in recent weeks. I will not make that mistake again because I was repaid for that by receiving another foot or so after I hit publish. I’m not sure which karmic deity or spirit thought that was funny, but I found it less so as I was running the snowblowers and shovels. Because of that, let’s jump right into the bourbon, shall we? I don’t want to chance getting cosmically punished for something else I say.

Way back in 2015, I set up a visit with Distiller Samuel Mead to tour Wyoming Whiskey. (You can see photos and read about that visit here. ) I was on a trip to Yellowstone with my wife, my Mom, and my Stepdad and I thought that it would be fun to bring them along on the tour. Especially for my Stepdad who is also a whiskey fan. Mead was a gracious host and I have had a soft spot for Wyoming Whiskey ever since.

It was with that thought in mind that I happily accepted a sample of their new 10th Anniversary Edition bourbon. So, what makes the 10th Anniversary Edition special? For starters, it is 10 years old. This is pretty obviously about as old as you can get out of a 10-year-old distillery that doesn’t source its products. So beyond being crafted from 20 of their oldest barrels, it was also a collaboration between founding Master Distiller—and Bourbon Hall of Fame member—Steve Nally and current Master Blender Nancy Fraley. Here’s what the distillery has to say about this special release:

“We are proud to honor our roots in this state with an exceptional 10-year-old whiskey created by the fusion of Wyoming water, Wyoming grains and Wyoming weather. We will always distill our whiskey the right way, not the easy way,” said Brad Mead, Co-Founder of Wyoming Whiskey.

Nose: Caramel, vanilla, cherry, and oak.

Mouth: Sweet. Notes of cinnamon, caramel, allspice, almond, and oak.

Finish: Long and warm. Lots of cinnamon and allspice and a hint of mint

Thoughts: This is a very tasty bourbon. It is out of my price range, but I'd happily accept a glass or two if you were pouring it. It has nice baking spice notes and a sweetness that is present but not cloying. Wonderfully drinkable neat, but takes an ice cube well. I really like it. It is worthy of a milestone release.

Summary

This wheated bourbon delivers. It looks light, but the flavors make for a solid all-around pour. This is a “don’t judge a book by its color” (see what I did?) bourbon. The Larceny Very Special Small Batch Bourbon has a long finish, not only on the palate but in my chest (a nice warmth, not a big burn). 

Conclusion – Larceny Bourbon Review

Bourbon drinkers tend to group wheated bourbons into a category of their own, just like high rye bourbons compare with others. In this case, Larceny Bourbon compares well to any bourbon in its class. It’s so easy to drink, and a $30 price point makes it a must-have. You won’t be embarrassed serving this to the most refined bourbon drinker.
